You will discover:
A taste revolution. The reign of Louis XIV was a milestone in France’s culinary history: it marked an abandon of previously popular spices in favour of a rediscovery of the authentic tastes and flavours of food. The period was also witness to innovations in vegetable production techniques (asparagus, strawberries, pineapple …) and of course, the invention of Champagne.
The dining habits of eighteenth century aristocratic society: A meal “à la Française” was simultaneously a moment of solemnity and of great conviviality. You will learn that the opulence of the dining table went hand in hand with a sense of ritual in the upper classes of society of the Ancien Regime.
